PROVENANCE

Turano vineyard: 8 hectares with mixed espalier and Veronese pergola layout and Monte Caro vineyard IO has a Guyot-type espalier layout density per hectare of approximately 3500 to 4000 plants with a yield of approximately 1.5 kg per vine .

 

GROUND

Terraced hillside position from 150 to 300 meters above sea level, very calcareous composition with moderate alkalinity and an exploration of medium root depth. The scarce water availability and the high surface stoniness create a unique condition for a very low production but of extreme quality.

 

PAIRINGS

This wine is excellent to accompany savory first courses, such as risotto with mushrooms. Also ideal with meat-based dishes such as grilled meats, roasts and game. Also exceptional with cured meats and medium-aged cheeses.

 

TASTING NOTES

Upon visual examination this wine shows an intense red colour. A large, intense, fine and persistent bouquet with notes ranging from small red fruits to an elegant hint of toasted wood. On tasting this soft and velvety wine with excellent concentration and persistence, it maintains a good drinkability characteristic of Valpolicella, while presenting intense fruity and spicy scents with a chocolate undertone.

DESCRIPTION

The carefully selected grapes in the vineyard during the harvest are then vinified with delicate crushing and destemming. This is followed by fermentation at a controlled temperature for 8-10 days. Once the alcoholic fermentation is complete, the new wine is kept in steel tanks to then be “passed over” on the Amarone pomace. This is precisely the true characteristic of this product: the “ripasso” of the new wine on the pomace of Amarone just pressed in the month of February, favors a second fermentation which facilitates both the extraction of the tannins and the typical aromas of this wine. Thanks to this passage, the wine acquires extreme longevity and structure. After racking, the malolactic fermentation takes place, which is then followed by a careful selection of the best batches. Finally the wine ages for about 36-48 months in medium and large barrels. After bottling, the wine rests further for at least 6 months in controlled temperature environments.
