Tasting notes

The brilliance of garnet reflections on an intense ruby ​​red, Biferno is a wine with a full taste and aroma. Olfactory nuances ranging from the ethereal of vanilla to the acute notes of spices and cinnamon. In the mouth it is rich, velvety and harmonious, perfect for enhancing red meat dishes or traditional cheeses.

 

VINIFICATION

the vinification is of the traditional red type with daily pumping over for the first 3-4 days to then carry out, every day, a single and long pumping over at a controlled temperature of 25°C until the alcoholic fermentation is complete. Subsequently, the racking takes place and the best conditions are set up for the start of the malolactic fermentation. Once this last phase is completed, 2 or 3 rackings are carried out before our wines are aged partly in steel and partly in 500-litre tonneau for a minimum of 36 months. After the refinement, our oenologists prepare the cuvèe for the bottling of the Rosso Biferno DOC Riserva.

TASTE

on entering the mouth it is robust and enveloping, harmonious and velvety. The presence of tannins is just and delicate. Full, round finish, supported by good alcohol. Excellent aftertaste with pleasant hints of cherry jam, plum and vanilla nuances.
