AMARONE DELLA VALPOLICELLA DOCG

 

PROVENANCE

Turano vineyard: 8 hectares with mixed layout with espalier and Veronese pergoletta and Monte Caro vineyard 10 hectares with Guyot type espalier layout density per hectare from about 3500 to 4500 plants with a yield of about 1.5 kg. per stump.

 

GROUND

Terraced hillside position from 150 to 300 meters above sea level, very calcareous composition with moderate alkalinity and an exploration of medium root depth. The scarce water availability and the high surface stoniness create a unique condition for a very low production but of extreme quality.

 

PAIRINGS

Game of all kinds, stews, grilled red meats, long-aged cheeses, even slightly spicy ones.

 

TASTING NOTES

Violet ruby ​​red color of good intensity and density. Spicy aroma of dried figs, marasca cherry, aromatic herbs. Good persistence on the palate, with sweet elegant tannins and a pleasant velvety balsamic tone. Balanced aftertaste with great enveloping and pleasantness.

 

DESCRIPTION

The grapes are carefully selected and placed in small plastic crates of about 5-6 kg. and subsequently placed in special drying rooms (fruit cellar) with the possibility of humidity control. Here they will remain for a period of approx. 3 months where there will be a 30% drop in the weight of the wet part but a great concentration of all the essential components of the berry. The vinification is carried out in stainless steel tanks, at a controlled temperature, where the new wine is born over the course of about 20-30 days of maceration, with punching down and delestage. After racking, the malolactic fermentation is facilitated and therefore the wines are transferred to wood of various capacities, essences and origins.
