DESCRIPTION

This wine is the result of a noteworthy vintage, thanks to the particularly favorable climatic conditions. Following an initial, rigorous selection of the grapes in the vineyard, the harvesting takes place by hand during the month of October. Only the best bunches are placed in small crates and then on traditional racks in large, airy fruit cellars, where they remain to dry for about 4 months. During this process a series of biochemical transformations take place which allow the achievement of the ideal degree of drying of the grapes. Following a further selection of the grapes, the destemming starts, which will be followed by maceration and alcoholic fermentation which will allow the right structure and alcohol content to be reached. Then begins a long period of maturation of the wine for about six years inside small and medium-sized barrels. Finally, it is aged in the bottle for at least six months.
