RIPASSO

The grapes harvested by hand in small baskets are pressed and processed with the traditional red vinification with maceration for 10/15 days; once finished, the wine is decanted and kept in steel containers. In January it is fermented on the marc of Amarone for about ten days and then matured in oak barrels for about a year. After this period, the wine is bottled and aged in the bottle for several months.
